Cranberry Orange Relish

1 package fresh cranberries
1 small orange (California are the best)
1 cup sugar
1 cup water

Cut orange into slices including the rind. Cut up the slices into small (1/2") pieces.

Rinse and check berries for any wilted berries - discard.

Following package directions for cooked cranberry sauce, place water and sugar into
saucepan, stir to dissolve sugar. Bring to a boil. Add cranberries and orange and
return to boil. Reduce heat and boil gently for 10 minutes, stirring occasionally.
Remove from heat. Cool completely at room temperature and refrigerate.
Makes about 2 1/4 cups.

Great idea for leftovers: Large rye bread, left over sliced turkey, leftover stuffing,
cranberry sauce. Build a sandwich. Layer all the above incredients. Serve with
hot turkey rice soup.
